Rosé Armonía de Tintas
An early, manual harvest is carried out. Whole bunches are pressed to achieve a juice with less oxidation and color. All three varietals are co-fermented. Fermentation takes place in stainless steel tanks at a low temperature of 12-14°C. Upon completion, 40% of the wine spends five months in second- and third-use barrels, while the remainder remains in stainless steel tanks. A battonage of fine lees is performed every two weeks to achieve greater complexity and fullness on the palate.
